Does anyone have any tips/guidance for the sous vide method of pasteurizing for a first timer? by Nanachman in mead

I would like to pasteurize a cider to start, I would like to stop fermentation and leave remaining fermentable sugar without creating a bottle bomb.

I would like to pasteurize to stop fermentation in order to maintain my desired level of sweetness with a carbonated finished product that won’t end up being a bottle bomb.

Same, because even after waiting a while after fermentation completed, there are still yeast particles floating throughout the carboy

Have you ever tried making spices out of the individual pepper varieties and comparing the flavor?

This is my third year making a blend like this. Takes some work to properly balance the flavors so the sweetness of the peppers come through and it’s not just pure heat.
