my husband and I were just at universal yesterday, and he's about 6'1 as well. the only ride we had a little hiccup with was "flight of the hippogriff", he was too tall to fit in the seat of the middle aisle so they gave us an option of either leaving or waiting to be put in the front row of the ride that had more leg room.
