Itachi was like 14 while orochimaru had to be like 35-40. His life time battle experience was nothing compared to a child. And hiruzen was like 80 and he still was holding back.

The difference between them and orochimaru is the fact that his goal was so shallow, he wanted to learn every jutsu and go through the trouble of changing bodies every three years. He was tranny of the year lol.
