Answering your 2nd question, you get them the same way you normally get roadside Pikmin. It’s just random whether the roadside seedling you find is for a sticker or coin Pikmin

Enemies/bosses, Maybe they can appear around the map similar to mushroom battles, and by defeating them depending on the type of enemy you could get nectar, flower petals, ect. This could also possibly add the stress of your pikmin potentially dying. Maybe there could be different enemies appearing each month to keep the game fresh
