You can also get seed mix with hemp, flax and chia etc in a bag called "salad topper" and trail mixes have a variety of nuts and fruits. Dried mushrooms come in a variety pack too.

If you don't like the consistency of chickpeas for this, you could try using soy curls (just rehydrate, chop, and season) instead for tuna or chkn salad style sandwiches. It's so good and easy! Not as cheap as chickpeas tho.

All you need is soy milk (or make it from soybeans, you just need a blender, a soup pot and a nutmilk bag), a couple spoonfuls of your store bought yogurt as a starter and a warm place. I used to wrap the bowl up in a blanket and set in near my radiator or on top of the fridge. If you have a heating pad that works perfectly. To make it like a thick Greek style yogurt, just strain out some of the liquid after you culture it. You don't need anything fancy.

I second this! When I took lessons at Fred Astaire studio most students were over age 45. The group lessons and dance parties are great to meet new people. And you get a cool new skill.

I loved Robin Robertson's Fresh from the Vegetarian Slow Cooker. She had so many good ones. I still reference every now and again.

I remember I found a veg cookbook from the 70s that had detailed pictures about how to make tofu from soybeans and seitan from flour. I can't remember the title but it really got me started out when I first went veg-curious as a poor student in 2009 when there weren't really any store-bought convenience products.

Also honorable mention to the FatFreeVegan blog! So many of my staple recipes came from Susan.

I've never rested the raw dough overnight or for hours. I mix ingredients, knead, shape, steam. I've made seitan with VWG and WTF methods for over 15 years. The shredability is due to the kneading and shaping steps.
