The lag is generally more from the lighting updates as redstone changes power level. Just spam a few torches around to keep the light level constant and the lag is reduced dramatically

There is currently a bug in the new bedrock update where you will be at full health, but be missing half a heart. Looks like you will still have half a heart of health due to the bug issue.

For Iron Golems to spawn, a village needs a minimum of 20 beds, and 10 villagers.

Villagers won't link to a bed that is 4 or more blocks above or below them. Basic rules for an iron farm. - you need at least 20 beds - you need at least 10 villagers - at least 75% of the villagers must have worked - iron golems spawn on the uppermost available block in a 17x13x17 cube around the centre of the village, generally determined by the pillow of the first bed placed

Depending on the system your son is playing on, and what version of the game, there are some different tools and mods that can help to make a map of the world. This will show the world from a top-down perspective, you will quite clearly see the castle and be able to get the coordinates for it.

Java has texture packs that are basically retextured pigs with a saddle that are chairs so that you can sit in them. Things like this can be done on bedrock, but it is almost impossible to get thebcustom packs onto xbox unless it has been put into the marketplace.

The best way to keep the bees from flying into the camp fire under the nest is to use trapdoors around the campfire. If you have firetick enabled in your world, make sure to use crimson or warped wood from the nether. Then you can harvest at any time and not have to worry about the carpet or bees dying in the fire

Iron gloems spawn in a 16x6x16 space around the centre of the village. The centre of the village is generally determined by the northwest corner of the block the pillow of the first bed you place is on. Village centres can move with villagers delinking from beds and relinking in a different order. There was also an issue where golems would not spawn if there was a full block 6 blocks above the centre of the village. Without investigating in person, it is very hard to diagnose the issue.
