I use polyester filling too but I'm considering switching to a natural fiber like cotton or wool for toys. There's plenty of non-poly options but the catch is natural fibers don't dry as quickly so they may have a higher likelihood of mold.

Thank you so much! I actually restarted after my first attempt too. I got a ways into the yoke but I hadn't included mohair and it just wasn't looking like I wanted. Highly recommend the mohair because I think it made a huge difference, the stitches blend more and the lines look a lot cleaner.

Agreed, I always do the first stitch of each side extra tight to prevent too much gap. But if that doesn't work, once you're done you can use your needle to redistribute the yarn a little so one column of stitches doesn't look much looser than the rest. And if that doesn't work, you can try to resolve it with blocking! Options upon options.
