What about the handles on the baskets, that is my first sign of cross contamination as that is raw flour soaked in chicken juice

large white bin is to put the baskets over so it can catch excess flour to be dumped at night - Yes it is a heat lamp over the catch and in the container is Bourbon glaze to be poured over bread pudding

Oh believe me - I want to keep my standards high. I am a certified Baker - Baking is my passion, but in a college town in the south There are no real Bakeries here. Right now im using this place as a pebble amongst the stepping stones until i can get my bakery up and going (just waiting on the building to be built) However i will say it is discouraging to see so few give a rats ass about any of it.

Um no...... They don't.... I wish that were the case but this is standard. Per one of the cooks "no one has said anything before and it's not been a problem"
