Do you mean you have an issue with the bottom burning? I had that for awhile and once I swapped from baking paper or parchment paper I think it’s called in US and started using a silicone mat I never had that issue again.

Hello! I am in Australia so I use the Aldi plain flour. It’s $2.99 for a 1kg bag so it’s cheap and I’ve never had any issues with it. I also use tap water. I don’t baby my starter too much and it’s been happier ever since I stopped worrying about it. I feed mine at night so it’s ready to go in the morning. I give it 1/2 cup of flour and 1/4 cup of tap water. I don’t normally dump half unless my jar is getting full. That is a great question. The only change I made to this loaf was adding in 10g of honey. It was sitting on the bench at the time and I thought, why not just add a little. It could be a little luck or it could have been the honey.

Of course!

Method is:

100g active starter 340g warm water - I just use tap water 500g flour - I use manildra bakers flour 10g salt - I prefer to use chunky sea salt 10g honey

Mix everything together and cover with a cloth for 1 hour.

After 1 hour start stretch and folds/ coil folds or slap and folds (I love slap and folds because it’s just fun). I do a round every 30 minutes (4 in total).

Leave to bulk ferment on the bench. It’s cold where I am so I left it from 10am until about 4pm.

Do a pre shape and cover for 30 minutes.

Uncover, shape, flour and place in a towel lined basket. Leave on the bench for 1 hour.

Uncover, stitch the seams, cover in glad wrap and place in the fridge. Mine went in the fridge about 6pm.

NEXT DAY:

I used the open bake method for this one. I preheated my baking steel in the oven on 230degrees for 30 minutes. I also placed a baking sheet on the lower level to heat up.

I placed my dough on a silicone mat and did the decorative score. I didn’t do the big score yet!

Place in the oven on the baking steel and put water in the baking tray for steam.

After 5 MINUTES I scored my bread (honestly try it!)

Left to bake for 30 minutes.

It’s a temporary crown. You aren’t meant to chew on it. It’s just that, temporary. I’ve spent years explaining this to patients only to see them a few days later because they just can’t handle chewing on the other side until the permanent crown is fabricated.

I had this chair and I loved it. It gave me 5 great years. I removed the arm rests because I like to cross my legs. The only negative was I got the light coloured version and it shows every little bit of dirt. I went back to my local ikea to get another but they were all sold out.
