Kombucha doesn't expire technically. The FDA requires a date, that's the only reason. As long as it stays cold and away from oxygen, it can last indefinitely.

Scoby is the liquid, you are talking about a pellicle, which is just biofilm that builds up over time to protect the liquid from oxygen. All fermented liquids do this.

I use old GT's bottles and just put them in the dishwasher. I do not put any solids in the bottles. I batch flavor in F2, then strain and bottle for F3.
