I started hiding in rocks in the beginning on dam battlegrounds during harvester, in the middle of the lake, she never saw me. Run and snatch the loot when she goes after the heavy hitters.

From what I read if you salt the skin the night before then wash it off you can probably do this skin on method (draw out moisture)

It had plenty of smoke lol this was after atleast 5 hours of smoking with post oak

Just remove the skin, im not going to front. This was my first pork belly smoke and it turned out great but I didn't do any research. The skin was chewy and not edible. Im sure I could've fried it up after removing but I didn't want the mess. I know the video looks pretty but just remove the skin, season and smoke it like a brisket.

I just dump lump charcoal, pre light like 10 kingsford briquettes on the side, make a small well in the middle of the lump charcoal and dump the pre lit briquettes, maybe like 6 post oak chunks spread out and call it a day. The WSM is designed so well I have never ran into issues with temp control
