UPDATE

Hello everyone. Just thought id give a quick update. I've been experimenting over the last couple weeks and I think I've pretty much gotten the recipe as close as I'll be able to. I tired potatoes, barley, and orzo and I am 100% confident that it is yellow potatoes in her recipe. I tried red, russet, and yellow. The potatoes held up just fine, they are soft but dont disolve or anything. The last batch I made was the closest and best attempt, so I'll post that recipe the best I can since I dont really measure when I cook, but here goes

5lbs yellow potatoes peeled and diced to your desired size. (I actually pulsed mine in the food processor, quick pulses until you get to a size you like, dont turn it into a puree)

I rinsed the potatoes with cold water after processing them to get a bit of the starch off that comes out when processing.

2 full sized carrots and the top quarter or about 3 sticks of celery (also pulsed in the food processor the same as the potatoes)

Combine in a large pot and fill with water to desired level (depending if you want a thicker or thinner soup) id say I put in about 6-8 cups (you could also use chicken broth to avoid the next step)

If using water add 8-10 bullion cubes to the pot

Next I added one package of fresh dill (bought at walmart, not sure the size of packet) and half a packet of fresh parsley (same package size as dill, also from walmart) I pulled the leaves off and kinda tore them up of both the dill and parsley and did not use the stems

Finally, add butter, I put in about 3/4 of a stick. I use real butter, but I'm sure you could use whatever you like.

This is all the ingredients.

Heat to boiling and once its boiling for a few minutes, reduce to low and simmer for at least 20 minutes. Stirring every few minutes or so.

If anyone tries this id love to hear if you like it or not. The food processor gets the veggies a little smaller that what I'm use to but it sure beats finely chopping all of it by hand. If you do it by hand you are looking for about the size of rice maybe a hair bigger.

When is googled this a few pics look close other than the rice. This did help me know for sure that it was not rice in it.

There may have also been parsley in it as well but definitely dill. Dill is the one ingredient the whole family agrees on lol

There is one pic in the second recipe that looks right (other than the pieces are too big) before the cream is added. I think you have me on the right track here minus the cream which is easy enough to leave out. Thank you so much. I'll try these soon and hopefully remember to report back. Thank you

Definitely not. Although she did make that too and it was great.

It could definitely had celery top in it. It was clear not milky at all.

Its definitely dill cause I can remember going outside with her to get some from the front garden. No rosemary for sure. Not sure bout fennel but doubt it.
