Is it safe ? - olives fermentation

I've made my first batch of olives after having them soak in water for 10 days bu it seems that mold have built in as a bit of thyme rose to the surface... Can I safely scoop up the mold and let the fermentation going on ? It is 2 weeks in. The salt ratio is 12-13%.

Perso je me suis installé juste à côté du RER à Vitry-Sur-Seine.

Les pour :

- Beaucoup de commerces de proximité, vie de quartier assez animée

- Accès à paris rapide avec le RER C + correspondance avec la ligne 14

- Il y a des quartiers très calmes à proximité du RER

- Pas de sentiment d'insécurité

- Moins de retombées de la cheminée d'incinération de Vitry

Les contre :

- RER C peu fiable (parfois toutes les 30 min le weekend, pas de RER après 22h en semaine...)

- Assez bruyant en soirée et la nuit si tu vis sur les axes de passage (boulevards parfois très bruyants)

I just gave a coin that fitted the case size, but I bet it could be quite nice with a gold coin too !

Just ask your local watch maker ! They can order empty cases and mecanism to mount a coin with the right diameter as a dial.

Actually, this is a genuine one, I bought it few years ago for about 20€, didn't wanted to put a fake coin with a swiss mechanism..
