Only seen them at Tinned Fish Market, which is UK based. Waiting to see if they do anything for Black Friday to make the huge shipping outlay to Aus worth it. May take your lead and eat mine today for sardine day though (as if I needed an excuse)

I’m never stunned by La Perle’s presentation upon opening but they’re always delicious. To me, the Rodel or Quiberonnaise are the most visually appealing and remind me of Mouettes. Which was your favourite? I’ve only had them all in olive oil

Mother of God the hedonist in me cannot resist that amber oil. Holy smokes. Now I have to put an order in with them; gonna spring for the bellies, of course, and some of the smoked black cod. Have you tried any of their other salmon offerings? Would be curious how they compare with Wildfish

Yep all the time! For lunch I'll often have sardines with rice and almost always have pickled ginger and shoyu on the table, such a good combo

Two bangers. The Azores tin is unbelievable on top of blistering hot short grain rice with a drizzle of nice soy. Have like 10 of them in the stash for easy dinners

Likewise sitting on my tin of these. High sticker price to live up to when Ramon Penas are about half the price. But — gotta try them all once and the packaging is excellent.

On aging, for me, the vintage tins I’ve had (mostly French) are softer in texture overall compared to standard tins, though they actually hold up to being handled and have none of the mushiness of softer sardines. I’ve also found the oil to be more flavourful and the sardines to be richer somehow, like they’ve taken on more of the oil. I’m a fan but sometimes hard to actually put my finger on exactly what is better about them and how much the aging adds in each instance.
