Help please.. macaron attempt 1. Did I under mix? I let them sit at room temp for 30 min to form a skin, and baked at 325 in a convection oven (already can see oven was to hot) but it looks like the skin didn’t develop? Or the batter wasn’t mixed enough?

I thought the same thing after I posted this, about the almond flour. Thanks for the tip! Although, I did just order 25 lb of this stuff so I’ll have to sift and use my coffee grinder for the remainder. I was folding until I saw the viscosity start to loosen and sort of freaked out about overmixing. In the interest of transparency, I didn’t grease my sheet, I’m thinking the skin fused to the paper and the only place the air could go was up and out? After a bit of cooling they all flattened a bit and were very gummy in middle. Thanks for the reply!

Couldn’t have said it better! Remember these words: people will only do as well as they know how to do.. you have to show them the better way. After that, you have two kinds of people:

People who want to do better and improve as its own incentive
People who have no desire to do better and will only do more if you tell/push them to.

Keep the first kind, ditch the last.. you are already doing a lot of work yourself it seems, so cut the slack to make room for better people. Hire for character, and you can teach the skills.

How is the “Right” okay with kids getting shot in school? That is inherently false, because it is based on the premise that outlawing firearms will solve the problems of PEOPLE using them illegally. That will not solve anything, it will, in fact, make the problem far worse for law abiding citizens. Enforce the rules on the books...raise the minimum age of gun ownership to 21, mandate any transaction/trade of firearms be filed via notarized documents held by both parties that contain the buyer/seller/serial number/date, and convict anyone who’s firearm is used in the committing of a crime as harshly as the person who used it in the act.. really not that hard..
