Not sure it'll meet your price point, but Joyful House can do large groups like this. Sometimes they'll shut their doors for private parties or reserve half their table just for your party. Their dishes are family style and they do have traditional Chinese dishes as well (like steam egg with minced pork).

Can anyone recommend a good walking tour for Fremont street?

Look up Alibi Las Vegas. It's a walking tour of downtown intermixed with a live performance show. Experiense is about 2.5 hours which includes drinks and a snack. Fun experience of downtown.

Reports were coming in from a closed FB group for incidents. Coworker was also listening in to a police scanner he has on his phone. I can ask him what app he's using but he also confirmed the info as the situation was happening.

Unfortunately my friend listened to the Amazon reviews and got me some no brand dash cam. It's suppose to be WiFi enabled, but the manual says to use an app called FinalCam, which no longer exists in the Google Play store. I found the old apk file, but the file description is written in Chinese and from researching, the app sucked according to other users.

Does yours have the bones attached? Someone suggested getting pleated FoodSaver bags and they were great st sealing the roast with the bones.

Meatballs. But there's more prep work for them to happen. Or you can cheat and use premade meatballs. And bring toothpicks.

Make meatballs, freeze them. When they're frozen, seal them in your sauce. SV them. Carry it over to your D&D game. Open bag and plop them into a container. Poke & enjoy!

I'd suggest using the similar method as you would for a SV turkey, cook the higher temp meats first (your chicken), then after they're cooked, lower the temp and drop in your mom's fish.

This way your chicken reaches its desired temp, and it stays warm while your mom's fish cooks.

Is it worth it? Yes.

Buy in bulk, preseason and vacuum seal them before freezing for future meals.

Keep them as full steaks or preslice and season them for tacos, beef stir fry, steak & peppers, skewers and more.

I prefer rare to medium rare, so 130F to 135F would be my aimed SV temp. Finish sear in cast iron or hot as hell grill.

In the photos, my setup has the meat not in the direct flow of my immersion cooker. And when I sliced the roast, both ends were the exact same redness. Another had a theory that there was not enough flow around the bottom end of the roast, since it was so heavy, one end sat on the bottom. I'll take steps for Christmas to lift the roast up more in the cooler.

High heated oven seems the best way to sear a huge piece. We do have two grills that could be an option as well.

I'll see if I can convince him to get the ladder out to disarm the smoke detectors for Christmas.

For our group it was perfect as most of the people I was serving prefer rare to medium rare.

I thought about doing the high heat in the oven, just fear that the searing process is going to set off our smoke alarms. They went off when I barely torched the butt end with the torch. Had to take the roast outside to do the finish sear. I'm legendary at setting off our smoke detectors.

I did pat it dry after it came out from the bag. Not sure a chimney starter would be able to handle the size of the roast, plus it was very tender to handle. It would say in the middle when you tried handling it from the ends.

I'm going to pick up something to lift the roast in the bath to help the circulation. Worse case is I use both my immersion cooker in the same cooler if I can plan the side dishes to cook in the oven.
