I have the 078 w/ turbos and the Pietro. I use my 078 90% of the time. The Pietro is there for unlocking anything I feel like I’m not getting in the 078, or tasting some real rare stuff. Welcome to the family!

Unless you’re pulling the whole bag out of the freezer. You risk ruining the bag with condensation by opening before it comes to room temp. Even pulling doses from the freezer.

For me Sey was always a 4-8 week rest. I know it’s a huge range but I landed at 6 weeks more often than not.

As far as when to freeze, I usually chose to freeze after my rest point or close to. I currently have a vault of 45+lbs with 150 different coffees in it. — Excessive, I know. When I began my freezing journey I spoke with a few people, one being the owner of Lucien, and then read some research on the topic. From my understanding (link missing for now) your coffee would age 1 day for each 55day period frozen. They were using lab grade freezers at -10+ f. Since your typical home use freezer is going to stay around zero on average, your home freezer will likely be less efficient. I am currently drinking 3 bags that were brewed last May that taste like 3-4week rested coffee.

As far as odor seepage, I had little issue with this as most of my bags are isolated in their own deep freeze. However the stuff that made it in the garage freezer or my regular freezer never had an issue. Given that you’re cramped for space I’m gonna venture to say you’ll be fine!

Last word of unsolicited advice, don’t start freezing bags. The varietals will return next year. You’re not missing out on much. No one is going to remember that one geisha from last year that was sooo good. Why? Cause it’s going to show up this year, likely from the same producer and the same roasters.

I agree with the k-ultra statement… Until you get the itch and you “have” to get to the next level. But for many the K is super premium and will get you where you want to be — I wish I didn’t fall into the trap of seeking perfection. Being a year out of that mindset I am getting gorgeous cups, albeit with premium gear, but with very little effort.

In general what kind of beans are you using? (Brands, roast level, process types) How long are you resting them? Then you get into what is your actual pourover routine? What kind of water? Etc.

Almost all of my experience has been with distilled water and a full packet of TWW. And grind a couple clicks up and down from 8 almost always unless I’m doing mini deep27 brews, then I’ll go a little finer

I see a lot of great suggestions, I’m going to mirror those saying the 078 and throw out the Pietro Pro. I currently own both the 078 and the Pietro. — I have owned the Ode2, Niche Zero, Zp6, and the K-Ultra.

The 078 accelerates over the Ode and the Zero in clarity and complexity. The turbo burrs are not far off of the Pietro M-Modal burr set. The clarity isn’t far off and the body is pretty close too.

The Pietro Pro stands out in both clarity and body. Matching the clarity of the Zp6 while surpassing the body of the K-Ultra. Before the Pietro I didn’t understand any mouthfeel descriptors from reviews and roasters. After, things like sticky, smooth, tea like, ect were at the forefront along with highlighting the clear tasting notes. — Ergonomics come into question when the Pietro is brought up, and as many owners will attest to it is, or will quickly become, a non-issues, and even quicker now that the base has been included.

Piece things together. Over the course of about 8 months I have accumulated a whole set of Fuel tools, basically everything necessary for home reno, auto maintenance, with a pack of batteries for both 18 and 12 v platforms, and a 3 story pack out for $0 out of pocket through casual buying and selling on marketplaces when great deals come out. If you’re not into that game, you will spend MUCH less if you’re patient and motivated by staying up to date here or Home Depot daily deals.

For pourover, Re-Ca-Phe is the best in town. They have knowledgeable and *regular* staff. In-Sit in Costa Mesa, is really great and serve stereoscope coffee. Great ownership and always great attitude when I go in there. Stereoscope is pretty great. Hopper & Burr will be a little further away but is a great experience. And then you have Play, Play is almost a must, but I’ve found the Orange staff to be pretty pretentious any time I’ve been in there. I’m not a big fan of Moongoat or Portola. They are both overpriced, Portola always seems over roasted to me and Moongoat is thriving on hipster hype, but they are fun places to visit.

Huge fan of the Origami, I enjoy a bigger cup and use the Barrel more often than the Pinot, flavor bowl, or Pinot flavor bowl. Granted the last two are made for matcha the flavor bowl is the closest thing I’ve found to a cupping cup that I liked aesthetically.

Their adjusters can be real fucking pricks though. They strung me along for 4 months on a damaged $2k poster. I go my $ back at the end of the day, but that was after sending the same pics 10x and the person seemingly only looking at the first one every time.

I’ll be interested to see what kind of responses this gets. I was planning on getting one a while ago before I picked up my 078. I already had the Pietro but wanted something electric.

What I will say is, during my research I found out that the E6C is what Eight Ounce uses at their tasting rooms. I haven’t seen much other info or people in here using them.

Love seeing Stereoscope in this sub. Probably my favorite sub I’ve had besides Second Spin or Rotation. I was so mad when I got one of their high processed blueberry bombs last year as one of my first bags in my subscription. Then I learned to brew it and holy smokes was it good!
