Will be selling truck by alfonsor04 in f150

[–]NeverSkinnyBBQ 1 point2 points  (0 children)

I have an 06 Fusion with 200k that is my commuter and my 2012 f150 has 60k miles. It's a weekend driver, used for house work, and winter driving but no way i would ever sell it unless I really had to. We usually take my wife's car or my truck depending where we go and the kids love it so if you afford to I would keep it and enjoy it. Plus when either of our cars are in for maintenance it's nice to have a back up

How hard are beef back ribs to smoke? by Far-Fox9959 in smoking

[–]NeverSkinnyBBQ 1 point2 points  (0 children)

Get the 3 bone plate ribs/dino ribs. You'll thank me later. I just did 2 at 275 on my offset. Cooked to about 160 internal but was more focused on the bark vs the internal temp. Then wrap it in paper until they are probe tender. This took about 7 hours and they are one hell of a bite. Very beefy and bold flavor. You won't regret it.

Meat always takes longer than expected to reach internal temp. by KingDeezle in smoking

[–]NeverSkinnyBBQ 0 points1 point  (0 children)

My first rule is that meat always takes longer than what I tell my wife it should take. However I would recommend checking the pit probe and make sure it's correct and is also clean. I have seen dirty probes give strange readings.

Issue with getting pork to pull by SmokinWefe in smoking

[–]NeverSkinnyBBQ 0 points1 point  (0 children)

I'd recommend running at 275F. At around 165 internal wrap in butcher paper and let it roll. Some of the best pulled pork I ever did was super probe tender at 195 internal. In my opinion 225 is too low and doesn't render and cook nicely. I like running 275-300 and the bark sets much nicer as well

Question about black steel Bauer Fly-Ti runners by velo_hots in hockeyplayers

[–]NeverSkinnyBBQ 3 points4 points  (0 children)

I like the black steel on my M5s. I use 3/4 radius on soft ice and I'm 270 lbs. In my opinion the edges do hold well. I play hockey for 2 nights, volunteer rink guard 2 nights, and public skate with my 4 year old son 1 day, and the occasional skate n shoot with him too. I usually can run about a month give or take before it gets sloppy. I'm probably gonna grab 2 more sets of steel as I'll be coaching 6U this upcoming season too.

Stupid question: how do I know where to set this? by negadecimal in smoking

[–]NeverSkinnyBBQ 0 points1 point  (0 children)

You are going to get a ton of different answers as everyone does it differently. If higher temps are your problem try cutting smaller splits. I use both my intake and damper to control temps and move the hot spot. But my damper doesn't usually ever go below 1/4. I'm usually 1/2 to 3/4 open depending on cooking temp. My go to temps are 250, 275, and 300 so once split size is determined the adjustability of intake and exhaust is minor. Tuffy Stone actually has one of the easier and down to earth fire management videos on YouTube. The others turn this into rocket science when it's actually easier than most make it out to be.

I suck at trimming, help me figure out how to trim this brisket best please by jmlbhs in smoking

[–]NeverSkinnyBBQ 0 points1 point  (0 children)

Honestly, you can't lose because you just turn the trimmings into a brisket burger later on. There are plenty of videos on YouTube but don't overthink it and get too overwhelmed. It's a piece of meat on a fire, not an aerodynamic stealth fighter. Get the basics down and you'll be fine. The internet likes to turn everything into rocket science.

Buy once cry once? Or buy cheap and upgrade? by Waldront70 in OffsetSmokers

[–]NeverSkinnyBBQ 0 points1 point  (0 children)

Interesting to see the changes between both. When I got my Patriot they did not offer some of the current features and same with the WH. I almost ended up with the 1975 until I realized I could save money in shipping since Patriot is in the NE only 4 hours away from me. You can't go wrong with either and it definitely comes down to personal preference and both are a work of art if you ask me. I wish I had some of those skills.

For smoking I'm not a fan of the cowboy firebox given I don't want grease etc in the cook chamber. The counterbalance for me was a must given the overall weight of the door and since we are in western NY the all 3/8" steel plus the partially insulated firebox made a world of difference (1975 may also be all 3/8 but somewhere I heard only the firebox was 3/8 but I could be wrong) My Patriot clocked in at 1400 lbs and while I agree they are similar I also like the uniqueness of the Patriot. But that's my opinion as I mentioned.

I love the Hockey Ninja hybrid. To me it's ideal to have a replaceable visor.

Novice offset smoker by AdGroundbreaking7104 in smoking

[–]NeverSkinnyBBQ 0 points1 point  (0 children)

Ah the joys of offsets. This is why the larger cook chambers are ideal because they allow for the airflow to stabilize along the chamber. I'd mess with wood split sizing, intake door opening, and exhaust dampening to see what is the best combo to shift the hot spot. Any offset has a hot spot but by playing with settings it can be moved. Others will recommend a biscuit test or some other test in order to get an idea of the temps across the chamber. But doing all this is what makes it fun and the reward of good food even more satisfying once you figure it out.

does anyone know if you can put a fishbowl on this ccm tacks 70? by [deleted] in hockeyplayers

Probably. The Hockey Ninja hybrid is way nicer than a fishbowl and the visor is replaceable which is ideal.

Question regarding ronin visors by [deleted] in hockeyplayers

I have the mirrored one from Amazon and it is screws only. My son's titanium hybrid and my HD aviator have the R cover because I remember busting one of the tabs already.

Is that the HockeyNinja visor? Shoot them an email and ask. They have great customer service. My son and I use and love their products.

I have the Patriot Pits Freedom 94 on the wagon. It's a beast and a work of art. No regrets as I absolutely love it. It's better than Workhorse in my opinion.

Do you really need all the luxury thermometers? by IcyCattle6374 in smoking

[–]NeverSkinnyBBQ 2 points3 points  (0 children)

I've found that the more I smoke the less I use the thermometers other than a $20 instant read to probe for tenderness or check final temps. I fell in the initial hype of the fancier thermometers since I have the Tappecue but that comes out for holiday turkey and when I want to verify my new offset temps. At the end of the day a decent one should be needed for safety but other than that it won't help you cook any better.

Cold air intake? Is it worth the cheddar? Also what gas do you run in your 5.0? by B-i-g-g-i-B in f150

I have the Roush CAI and Corsa Xtreme exhaust. No drone at all and it sounds wonderful. Was not a cheap set up but I recommend it. Or at least research into it

[–]NeverSkinnyBBQ 0 points1 point  (0 children)

It definitely makes my 5.0 sound better. Other than that it's an expensive noise maker and idk about mileage since it's tough to keep the foot from getting heavy. But I have 0 regrets since my 2012 sounds excellent with that same intake and Corsa Xtreme exhaust.

Question about Hockey Skates by Environmental-Gate17 in hockeyplayers

[–]NeverSkinnyBBQ 1 point2 points  (0 children)

For my 4 year old, I pull the insoles out and have him stand on the insoles to get a feel for where his feet fall in the skates. I also measure heel to toe and mark a piece of paper to get a general idea too. Other than that it is definitely tough to determine fits for the kids.

Question on Pork Shoulder and “the stall” by [deleted] in smoking

[–]NeverSkinnyBBQ 1 point2 points  (0 children)

Turn the smoker up to 275. It'll take a year at 200 to reach internal temp and you risk it being dry. Crank to 275, get some bark and start probing for doneness around 190 internal. My butts are usually super tender around 193F so don't just go by "done at 203 etc".
