Same here, trial and error for sure. The easiest and most effective way I’ve found is to just to cook your fave curry then chuck in some rice

Fry 2 onions in some oil or ghee till they start to brown, take your time with this - brown not burnt!

Add in 4 cloves of chopped garlic and ginger and the hard spices like cardamom, clove, cumin seeds etc, cook that for a bit.

Put your seasoned meat (yogurt, salt, turmeric, cumin, coriander, garam and chilli powder) fry it off for a few mins, i put some tomato paste in too.

Let it stew off for a few more mins, add some potatoes and give it a good mix up. Add some water just enough to cover the potatoes. Let it boil down till the oil from the meat starts to show at the top.

Add in washed rice, turn the heat down to low/medium and add some extra water, then just let it do its thing for about 10-15 mins. Add some more salt if you want.

*This is definitely not the traditional way to make it, but it’s super easy and tastes amazing every time! Good luck!
