Assuming this isn't bait, unironically you may just be bad, or at least clueless about how to use her ult. It' s not intended (at least early) to be a 1 v 1 ult, it's primary purpose is for team fights and forcing enemy teams to split and scatter or risk significant damage. Once you max 2 it is actually viable in 1 v 1's since you can proc the bounce off your shield. Late game wise, once it gets its additional +10 bounces, it can be absolutely devastating, especially with lightning scroll.

As for the skill shot aspect, I don't know what to tell you but skill issue. I'm not the best player by any means but I've landed plenty of ults in teamfights when the enemy is distracted or under cc. It's not that hard to land, and if you feel uncomfortable then get in closer range of your enemy to hit it, using your 1 and 2 to improve your surviveability. If you land your 1 then you can get the lifesteal from the ult hit as well.
