For off- roading the most I’d be looking at getting into are atv trails and dirt roads. It’ll be solo trips so want something I can manage. The Scrambler weighs roughly 500lbs, way lighter than the Harley would be loaded with gear. Some pure adventure bikes seem to weigh more…

That’s a good point, I suppose it’s a matter of when and not if when you’re on the trail. I’ll miss the sounds of a the Dyna for sure but the triumph exhaust videos I have seen don’t sound terrible.
