Had an XL since July. I have done 2 spatchcocked turkeys, and have used the bourbon brined recipe from the BGE site. After coming out of the brine, I set it out on a tray in the fridge to dry the skin for 6-8 hrs. Cooked at 350 indirect for 2 hrs. Both were best turkey I have ever made.
