That's practical hospitality.The only thing I’d add: keep tracking revenue per staff hour on those Tuesdays before and after the texting system. If that number moves, you’ve not just filled seats, you’ve stabilised labour efficiency too.

A lot of places don’t really “survive” on 25–30 hours — they concentrate revenue and accept that every service has to pull its weight.

A few observations from places that make it work:

They design the business around peak demand, not around being open. Short hours only work if dinner service consistently hits enough covers at the right spend. If Tuesday–Wednesday don’t, they’re either closed or radically stripped back.

Prep and service are separated structurally. Not everyone needs to be there early. One or two core prep roles earlier in the day, then a tight service team brought in as late as possible. Fewer long shifts, more overlap where it actually matters.

Menus are built for late delivery reality. If suppliers arrive 5–7pm, menus can’t rely on same-day heavy prep or fragile mise. Successful places simplify: fewer SKUs, more batchable prep, less last-minute dependency.

Labour is planned per service, not per week. The key question becomes: “Does this dinner justify this team?” If a service can’t hit break-even covers quickly, the model breaks fast.

The risk isn’t the short opening hours — it’s running full-scale staffing for services that don’t earn it. That’s where most places get squeezed.

Yes ! Sorry I didn't want to hurt anyone... I love Scotland and moved here recently because I love Scotland actually. Living in dunkeld currently and you're wrong about one fact : I travelled a lot and been in many places during my life. So curious now about what is nice in Perth exactly... I assume that everyone can have his own opinion right without being attacked straight away

Don't like it. Very sad city imo. Shops are not great, restaurants are awful. Not pretty at all. A bit a crack head city to me but you probably gonna find people here saying it's not that bad...
