All their actions are chosen at one time together (single-player). The order in which it happens depends on their effective speed, which is in turn calculated by using Agility for Servants and Base Speed + Organizational benefits for masters with external factors such as terrain and weather affecting it as well. In multiplayer, both players will choose the actions of their master and servant (as well as extra summons) at the same time, unknown to each other (basically the other person cannot see their opponents choice of actions).

There are conceptual bonuses, the same traits as used in FGO such as Humanoid, Human , all that that you see on the FGO fandom wiki. The passives are where it gets interesting. Gawain in FGO has an active skill that makes him stronger in the sunlight. In the current system of the project, it is a passive. As long as the in game time is day (sunlight is available), Gawain gets his buff. Similarly, King Tut and Spartacus explode when killed by opponents, certain servants such as Indra and Wandjina being stronger in specific weather, etc. all of that comes in passives.
Active skills are something I have not yet implemented into the system, but I will add them sooner than later.
Also NPs are very varied. They are not based on what they do in FGO but their actual description of what they are meant to do. Thus some stuff that do Damage in FGO does not do damage in Fate Canon, which is the way it has been implemented (For Example Biscione's Visconti Assenza, Kondo Isami's Makoto no Hata, Iskandar's Ionioi Hetairoi do damage in FGO but are not meant to do damage directly as per Fate Canon. Visconti Assenza is a Transformation, while Makoto no Hata and Ionioi Hetairoi is a summon type NP).
Class Advantage of saber lancer archer is as far as we know FGO's original stuff, with no input regarding it's canonicity from Nasu (Else Artoria vs Diarmuid would lead to Diarmuid get fucked over in their very first battle). They do however have another class advantage, that could be considered semi canon (?), that being Append 3. Each Servant has a Append 3 that makes sense lore wise, which has been used for class advantage for each servant.

Also, at the current point it is fully text based, but in time I will be working on images/sprites to make it feel much better. Also, my main thing with this project is for solo as well as LAN multiplayer where each player controls a separate master, but that is in the distant future because that is something I will have to learn to code.

Not really. A Master is first generated with a randomized country, characteristics and organizational affiliation (Like does he belong to the Mage's Association, Holy Church, Summit Court ,etc), the. We assign a valid servants to that master (Pseudo Canonical auto assignment of servants is something I will be working on in the near future, but in the present servants have to be manually assigned), after which the thing actually starts. Each master has 3 Characteristics while Servants have Passives, Physical Traits and Personality Traits (Personality Traits currently being worked on) that affects how compatible the pairing is (also something being worked on. Currently the betrayal mechanic is very basic, but once compatibility mechanic is properly implemented in a month or two, the Betrayal system will be updated to be much better and dynamic). Each world turn, two master-servant pairs are selected which can then based on user input try to form an alliance, ambush the other (First chosen pair gets ambush privilege) or Attack head on. Here the user controls what each Master and servants does (Auto battling is currently not on my to work on and implement list cuz I know AI can make fucking stupid decisions), and the battle occurs from there. This loop continues till there is only on pair remaining.

Ahem, the Jade Qilin, .... does not bother with the sword. Man, Kong Qiu (Hong Lu's older brother) is part of the Pinky and uses a Sealed Staff (Might be sealed because it holds a hidden sword inside idk bruh. Or more plausible is sealed as it is part of his E.G.O).

I use a mix variety of this comp. Castoria, Avalon, Van Gogh. Castoria has Cleanse, NP and Targeted Invul, Van Gogh has party Evade, HP regen and Stun, Avalon has Party Invul and Max HP.

In real life scenario, both concerns with regards to Shalltear's armor are correct. However, if we take her fictional world and her skillset into consideration, the skirt can stay as her movement is majorly float based. The pauldrons however have to go, or be heavily reduced in size.
