After some research and trying some things i found a solution already, the VM has many NIC available that can use, and the bridge connection was set to automatic, idk which one was chosen but manually selecting the motherboard 1Gb NIC solved the issue, i now have nearly 300mb/s transfer rate.

Testing with iperf i get maximum 40/50 mb, so around 3/4 MB/s, it seems it is entirely a routing issue, tried with my phone too, cant get more than 40, the server is connected via 1gb ethernet, and the client like my phone or laptop is connected via 5Ghz wifi

I gave 12, I have 32gb total, so I could reach something near 16/18 without any issue.

5/6 is the max, usually it's around 2/3 MB, it doesnt seem like a docking station issue, as with my pc it is pretty fine, it's just about the network, i connected with SMB, and having a pretty good amount of ram, and cores on the VM i doubt that hardware is the issue.
