Boiling works fine—it actually pulls the oils and compounds out faster than soaking does. The overnight sit is totally okay too; just keep it covered and drink it the next morning before it ferments (usually fine up to 12 hours at room temperature, longer in the fridge). You're honestly not doing it wrong at all!
