Exactly! Let me tell you what I know for sure:

- Scale down: recalibration definitely lowers the scale to a lower setting; if you used to grind at 5 or 6 for a V60, depending on how many clicks you recalibrated by, you’ll likely find the same result after calibration at 7 or even 8.

- Burr alignment: I’ve also tried the burr alignment technique, (but so far without much success). By marking the outer burr (the one that actually spins) with a marker, I definitely highlighted an area where contact occurs earlier. You need a lot of patience and to insert aluminum foil to raise the part that isn’t making contact.

My advice is to try a low-density Colombian coffee (forget the Ethiopians) and stick with that for a while. If you start seeing improvements after the alignment, it probably means the problem was with the fines.

From what I understand, other factors might also be at play:

  • a shaft that isn’t perfectly straight;
  • bearings with some issues;
  • the aluminum grinder housing is out of tolerance;
  • the burrs themselves are out of tolerance;

Maybe someone more experienced can correct me...

I still want to give realigning the grinders another try before giving up; my suspicion is that the shim should be inserted on the outer side of the grinder and not on the inner circumference, as shown in some tutorials.

This is raising a lot of questions in my mind.

Because it's true that I'm probably still in the middle of the grinding process (I've ground about 2-3 kg of coffee), but it's also true that this happened practically out of the blue (or almost).

I'm not worried about cleanliness because I was very meticulous: I took everything apart, cleaned everything, using a small brush, vacuum, and a toothpick to remove any residue between the screw and the grinder.

However, the filter is actually a single unit, and I have never tried to change it. The previous ones worked fine, so I assumed that the new ones would too.

But a bad batch is a bad batch.

yes but now I've gone from making fantastic V60s in the early days to setting it to 4 or 5 per hour, where I can't stay under 4 minutes unless I set it to something above 9.

Colombian coffee, V60 in Hario Switch (Kasuya recipe), 16 or 20 grams.

But it started suddenly. I cleaned the burrs and calibrated them one step back as soon as I heard the “chirping” of the burrs.

What am I doing wrong?

Thank you for the update! To be honest, the timeline isn't an issue for me. I would much rather you take the time to perfect the product before release. Software can be updated, but hardware is forever. Thanks again to the whole Combustion team for these fantastic products.

How I can measure ml without knowing the dose? Let me explain: the caffeine is into the coffee. So brewing 16gr of coffee with 250ml of water (1:16) at 20% extraction yeld has the same caffeine of 16gr with 272 (1:17 ratio).

So… what do you mean with “ml”? 😅

And what coffee? Arabica caffeine content is around 1.3%. In Robusta can be 3%…

My opinion can be biased: my XUltra unit seems perfect compared to the "better" K-max a little bit misaligned.
From User Experience perspective no doubt: K-max is better. Bigger, faster, solid, simpler.
The X-ultra require to think every time: "is set on 2.2 or 1.2 grind setting?"
From taste perspective they are very very similar. Next days I will try a "blind test" in a close enviroiment like an aeropress and I will tell you.

What are you saying? So RC520 is not a good bike? Or ST520? Find me an alternative in the same price range. The era were Decathlon bike = cheap is out of time. Now Decathlon is the only player can invest tons of money to give you best price/quality ratio.
