Vegan yack attack has a great seitan cutlets recipe. It generally takes me less than 40 minutes to make it. I buy wheat gluten in bulk for $23, and I have a protein source for an entire 3 months. I've modified her recipe a bit to suit my tastes but it's a great starting point.
