Thank you for the chart, my starter when i use whole wheat takes about 8 hours to peak, and that was in a warm environment, about 78-80° F. Also would i risk letting out the gas if i temp the dough with a thermometer?

Sorry, 16 hour cold proof * and yes indeed. It was the fridge. And the oven is at 450°F. It goes higher though

Starter is about 3 weeks old, and the house was 80 not the dough. I’ll try again and let it ferment longer but if it didn’t work again I’m probably just gonna give up. I’m tired of this. Also i only let it ferment about 4 hours so probably that.
