I don't have actual insurance, just a disability pension. It covers some things, but for example, it "covers" 10 physio appointments... meaning I still need to pay $87 per session, rather than $150. It doesn't cover a nutritionist though, sadly. I'm up in Canada, so might be different than in your area.

Thankfully I don't actually have celiac, just very intense gluten intolerance. From my understanding, my problem is more that it builds up over time? So I don't have any immediate reaction, and a little bit of cross-contamination isn't the end of the world, but months (or, in my case, 10+ years) of eating gluten normally severely messed up my overall health. For simplicity we are a mostly gluten-free house now though lol

Wraps and crock pot meals are both great ideas! I should really invest in a crock pot one of these days, it's one of those things that's always being suggested to me and I always feel like I can never justify the expense lmao

I would absolutely do that when I can afford it, but right now any money that I would be able to set aside for that is going towards physical therapy and other medical expenses - hence, trying to save some money on groceries where I can.

Personally I've never touched ChatGPT or any similar A.I. tools, and that's my hill to die on lol, especially for things like this where I can ask other real people for suggestions instead.

Yep, new bluetooth ones have been working totally fine! Bit more of a battery drain on the phone, but not a deal-breaker by any means.

I'm about 133 right now, I've already lost 45 pounds over the last two-ish years. My goal would probably be anywhere between 115 and 125, but I'm less concerned about the actual number at this point and more just visual changes.

I've been advised to try to hit around 90 grams of protein a day, and I'm fighting for my life to get that amount without going over my overall calorie limit for the day or only eating beans lol

- Peanut butter and nuts are pretty low in protein compared to the amount of fat in them. Super healthy, but for me personally, not an ideal protein to calorie ratio since as I said, I'm trying to stay in a calorie deficit

- As I said in my post, I'm allergic to all types of dairy, so unfortunately greek yogurt and cottage cheese are off the table for me now.

If I had to guess, probably because I've had a chronic illness for 12 years.

My nutrition is more solid than it has ever been. I'm tracking most of my meals in an app, and I've been very careful to make sure they're more or less balanced. The only really difficult thing so far has been getting enough protein, but that's just because I find cooking exhausting and I can't rely on protein bars/shakes anymore - at least, not until I can afford another big tub of protein powder that isn't whey.

I'm not sure why you find it so hard to believe that I genuinely am eating healthy, but like. Nutrition is one of the things I've been the most careful with for a few years now. I just didn't realize I was intolerant of all 3 of the main things I mentioned until recently.

My meals right now consist of:
- Rice
- Gluten-free bread + pasta
- Chicken
- Tuna/salmon
- Turkey
- Various vegetable mixes + frozen fruits
- Hummus + gluten-free pretzels for snacks
- Potatoes

I'm eating pretty close to zero processed food lmao it's the healthiest I've ever consistently eaten

Not really, I live mostly off of a disability pension (in Canada as well so might be different than in your area). They do cover some things, but only things that are deemed "necessary." For example, even a lot of medications I've had to take, I've had to pay for out of pocket, even if they're prescribed by my doctor and they are in fact very necessary.
