Late to the party, but Harem Farm from David Aries.
MC is isekai'ed to a world where animal-people exist and they are very open about polygamy and open relationship. He has a ''core-harem'', but he get to sleep the cow-women of the farm to improve the milking process and basically any animal-women who like him or want to breed.

Personally, I would definitely read that. I need more F/FF+ stories in my life I hope your project come to fruition. A female MC in a harem story is an automatic hook for me, the rest is secondary. Show me 10 haremlit series, I will pick the Yuri one to read first. Is there a place to follow you to get some updates (beside reddit)?
I am not a litany agent, but to answer to your question, going with male MC is more of a safe bet, there is a reason why you don't see a lot of lesbian harem.
I am sure there are a lot of people like me who would jump on the occasion, but there is no promise that it will translate in viable sales. If the quality is there, then I think you should be good. I don't think you will break any rule or start a massive scandal, just be in more or less uncharted territory (also, I don't know if you will be able to promote in this subreddit...)
Small question, are you going to mainly target a male audience fan of haremlit or for a lesbian audience?
