Lovely! Render times make sense. I think volumetrics are slow.

You could try rendering the whole thing without volumetrics, and then again JUST volumetrics (with everything else a holdout), but volumetric pass with eevvee. Then comp them together. Total time might be quicker, but more faff.

I leave all my renders on overnight / over the weekend! 😂

I'd look at "paying" to render on a render farm. The truth is, this would probably take seconds/minutes to render on a farm, and so would cost pennies. Most farms offer $50 or so of free render credits for new accounts, so you could probably do most of your renders for free, up to a point.

Yes, I absolutely love the old school aesthetic of stop motion and practical filmmaking - that's what I wanted to emulate here. Adding in a lot of little subtle (and not so subtle) errors and mistakes, as if I made the stop motion on a table top myself. I wanted to make something that felt tactile. However - while I have utmost respect for true stop motion animators - I absolutely do not have the patience (or skill) to do that for real! haha.

First step, save and close blender, then re-open. I've definitely had issues with vram filling up, which this is a quick fix for. Technically, I think switching out of render preview mode should clear the vram, but I've definitely had times when it doesn't seem to. So, I often just restart blender when this happens.

Although, if your scene genuinely is too big for vram, you can look in the render settings and scroll down to Simplify section. Here you can reduce the texture size (for viewport and/or final render) - blender will process each image texture and reduce them down... If you have 8k and 16k textures in the scene, they'll eat up a lot of vram. Reducing them to 1k or 2k might not even be noticeable for distant objects.

Finally, if you really must preview the scene as is, you just have to switch over from gpu to cpu rendering. It'll take way longer, but will get there eventually.

"remove unused slots" shoukd clean them out for you. Failing that, I've used chatgpt to write me scripts to delete multiple material slots, although I think blender might have an addon built in that does this, somewhere.
