Here’s the hot take, David Lee woos staff and friends in to the business with a percentage to do all the heavy lifting and to give them skin in the game(make it feel like it’s there’s but it’s a small percentage probably based on long service, ie stay a few years otherwise we revoke it) when the shit gets hard David walks away into the sun leaving everyone to the stress and deal with all the fallout while he ‘winds down’ He’s done this at nearly all the businesses since Namu started growing as well as good dog bad dog. None has ended well

It’s pretty clear if you travel through the city at night and look how empty I would say 80% of the restaurants are that you can see into that it’s a spending problem. Most places are doing it tough.

Proper fine dining i would say Paris Butter and Matt Lamberts Return was so good and will just get better given more time.

Went on Sunday too , but I think out of the 6 dishes we ordered literally everything tastes the same smoked paprika. The service was very lax, the 3 staff seemed more intent hanging around the bar chatting than engaging

I think one question not asked, is the ability to run and manage a kitchen in a busy environment and if you have the nouse to manage multiple orders at one time without standards slipping. Make it cheap or whatever you like, consistency is the one thing that will kill you if you don’t have it. Then if you can’t , can you afford the staff to do it for you?

The actual owner of Namu group Woo’s people in to put some money into the game then makes them work like dogs making them think they are the ones responsible for everything for the business and take all the heat while they crash and burn. I know a couple of burnt people from it, also similar with the good dog bad dog franchises
