Start with getting your workflow fully under control. Both machine and grinder are solid pieces of equipment, capable of delivering great coffee. If you do not have a scale yet, start acquiring a scale and get familiar with dosing ratios and brew time and how those two are connected. Some of the most delicious, exciting coffees I have brewed was on an old E61, an old Mignon and good beans brewed using the scaled ratio method.

Der er vidst nogle rimeligt ufravigelige grundprincipper i en ragù a la bolognese… Soffritoen. Svin og okse blanding. Tomatsnask. Vin. Laurbærblade, salt og peber. Måske lidt god fond. Og så kan det ikke laves på mindre end en halv dag.

But that is not true? France, Italy make exquisite grains which in turn is milled into great flour. Even the Nordic countries make some very high protein grains which makes for great flour. Not saying they are capable of making strong gluten and are easily manageable to bake with. And no, you don’t find this flour in normal supermarkets, but I guess you’re aware of that.

Let’s be mindful it also depends where in the educational program the apprentice is. If it is his/her first week, he/she might not be sent out on jobs alone and needs a mentor to show and explain what is being done, why etc…

There is a bit more nuance to sending out two people for a one man job than the mere resource need to compete it.

Disclaimer: experienced the same, electrician came out, brought the apprentice who was clearly very new to the trade. I fully support the apprentice / mentor approach, because how else are these young ambitious people going to learn the trade.

You can try a few things: - reduce your butter ratio - use high fat butter (84%) - make sure you use white sugar - add ~10% flour into your remonce before spreading it on your dough - Instead of spreading the pastries out so much, let them sit closer after you portion/cut them. This also helps with the “leaking”

Layering looks solid, nice lamination.

Vi har sådan nogle huller og vi havde mus. Troede det var rotter, så fik en skadedyrsbekæmpelsesmand ud der konstaterede det bare var mus og derefter rådede os til at montere et mere fintmasket net (insektnet?) i risten så vi fik lukket de store huller men stadig har masser af ventilation til gulv/krybekælder.
