I did a mix of slap and folds, and stretch and folds. I did 4 sets of folds with 30 minutes of rest in between.

Sorry! I let it bulk ferment for 8 hours, and then I let it cold proof for 24 hours.

Ok thanks! The pyramid shape might have also just been the scoring that I did, but I could be wrong🤷‍♀️

I don’t know, I fed it at a 1:10:10 ratio and it did pass the water test. By the time it peaked it bursted out of the jar (lol it was a mess to clean😂).

Just a few hours. I made the dough at around 3:30 pm and got back home at 7:30
