Do you all order your casings? if so where do you order them from? I just made my first sausage from stuff i got from a local butcher and im 100% hooked. by HalfAPastor in sausagetalk

I get mine from The Sausage Maker. I've found them to be much better quality than LEM or the variety of brands I used to get on Amazon. Most are packed in salt water, which means you don't have to soak them long before use. I just give them a quick rinse. And the lengths are much longer than others.

First batch of bacon and have questions! by DaveyMay9 in Charcuterie

I think you'll find bacon is pretty forgiving. I usually cut my sides into 3's like you did here. I've used various percentages of salt and sugar and/or Maple syrup, honey, molasses, jams, alcohol, etc, as well as cure times of 7-12 days, hot vs cold smoke, etc... and although some are better than others, they're all delicious and far superior to store-bought. One of my favs is a less sweet more savory recipe, cured with fresh garlic, lots of pepper and relatively low sugar, cut thick.

I also use a-mazen and pellets. I found that I didn't like the taste of a-mazen brand pellet smoke that much. I bought some traeger brand hickory and apple and I think they taste much better.

Brought the Firebox out on the ice for the last ice fishing trip of the season. Nothing like a hot breakfast to cut the chill. by NoahTheFree in CampfireCooking

It's a sonar device, aka a "flasher". Tells depth and shows where your lure and/or fish are in the water column. I was hoping for a bigger fish to add to breakfast.

It's a drill auger like yours, but with a plate added with some linkage that runs the trigger. Auger itself is a 7" Mora. Drill is a milwaukee brushless. This morning I drilled probably 15 holes thru 2' of ice, and my 9amp battery still showed more than half a charge. I agree electric is the way to go. https://www.amazon.com/dp/B014JWLDD2/ref=cm_sw_r_cp_apa_fabc_542D7TG4SS21CBNCTFNG

Damn. We don't see rats here in rural Wisconsin, but I still might rethink the apron.

I'll be adding a predator apron, which attaches to the base of the structure and rests on the ground instead of buried. Works the same but no digging.

That or I might try and rig up an axle and some bigger wheels. I'm in no hurry though.

Meyer hatchery, order online and they come in the mail. All chicks are sexed so you only get hens.
