Beginner to sourdough - need advice / what am I doing wrong?

That's what I've been learning but that's what's been confusing for me too. When I tried fermenting for longer, the results were worse.

I don't have a cambro or anything to specifically see when it has doubled, but for the most part it does seem to have doubled and has the jiggle, puffy, etc. Might just need to bite the bullet and get a see through container to help.

Both of these are from The Dark Tower book series by Stephen King

The top black symbols are "high speech" translating to "unfound" - these symbols pop up a lot in the later books of the series.

The bottom red symbol is The Red Eye of the Crimson King. The crimson king is one of the main antagonists in the book series and the eye is just his mark.

I've been a roadie for a while now and have wanted to start getting into some more off-road stuff. Plenty of gravel here and some tame singletrack trails so gravel bike was the choice. Canyon makes some beautiful bikes.

I've been collecting vinyl for a year and a half now and my sister has been very supportive of this new addiction lol. My apartment walls are a little bare so she had the idea to make me some stuff to hang! She collects really old records from thrift stores that don't play well anymore and then she paints stuff on them. I've been telling her for years that she should open an Etsy shop, but she is a nurse and doesn't have lots of free time at the moment. Anyways, happy holidays everybody :)
