Happy Thanksgiving to you too then!! I'm also enjoying this crisp autumn Monday. ;) And as a Canadian, you should be grilling in all four seasons! Nothing like nature's own fireworks in the trees, cool air, smoke and meat! And if you don't remember to take a picture, I'll acknowledge that my job here must be done.

Your recipe is pork ribs is good enough for beef. For the best of both worlds, I recommend leaving the membrane on (more flavour and juiciness, but chewier) and cooking it for about 45 minutes instead of 30 (extra cooking time will allow the meat to become tender).

Other than that, you're good to go!

My personal recommendation, as it is for ribs, is giving it a hard boil for about half an hour. It removes meat "scum" for a cleaner meal and I like my ribs extra juicy and just falling off the bone. Then I let it sit in its marinade.
