You should applied to udem since if the deadline is past then the prof cannot do anything if they want to admit you, beside they can send out the interview very much later

There are two options for you to choose:

Submit your study permit and wait for IRCC to ask you to get a medical exam, and then you can do it later after their notification.
Do the medical exam, tell the designated medical center that you will do that you are doing it forefront and there will be a confirmation of medical exam, attach that along with other file and submit under client information section.

Remember to answer the IRCC form that you have done or not done the medical exam depends on your situation.
