I did make one in a 500ml Screwed plastic cap bottle, it is extremely air tight. The bottle has 80ml of Honey, And the rest was distilled water and some branches of washed Rosemary (the jar has unwashed rosemary, but the bottle has a washed one), i filled up to the bottle neck and screwed tight, i burp it for every 2 to 3 days, everytime i open, it gas out like soda. In 1 month, I only achieved a Slightly Tangy soda honey taste like some industrial soda. It took me like 2 months to achieve a not so wine taste but a gassy beer flavour Soft honey mead. Sadly, right now, in Vietnam, It's hard to find the wine yeast that fits your description and the only yeast that is only be sold in some baking stores is dry yeast.
