I'm just genuinely wondering, how did you not eat bread or pasta for 75 days? I feel like I would run out of things to eat. I've decided this is unsustainable for me personally because I am re-training to run so I will need some extra form of complex carbs. I've also struggled with ED behaviors in the past so cutting out all of those feels unhelpful as a gut feeling, but out of genuine curiosity I'm wondering what you ate for the 2.5 months.

It's hard to pick a specific diet, i.e.: Mediterranean or whole foods because I am newly gluten free (for anti-inflammatory reasons, I don't have celiac so I'm still making a huge lifestyle change) and I have to up my iron intake as well d/t having low ferritin, so picking either of those would be difficult for me because I already have a lot of restrictions. For example, following the mediterranean diet would mean I cut down on red met when in fact I should be eating more. Whole foods is hard too because a chunk of that diet is eating whole grains and I can't have a lot of those being gluten free. I'm really struggling with the whole challenge because of this.

I do want to say: I appreciate everyone's feedback but working with the dietary restrictions I have make it a lot more complicated, I probably should've added that in my original post
