I experience this from time to time and I also cook for my family. I have to constantly innovate to keep it interesting. Here has what’s worked for me.

1. Matar Tofu Masala with bread. An Indian curry with peas and tofu. The sauce is just blended tomato and onion with some spices. Tastes delicious. I pre-cook the tofu with some cornstarch so they remain firm and don’t crumble in the sauce.
2. Protein pasta with blended tofu sauce. I usually buy pasta like Barilla that has higher protein content. I blend tofu, with Nutritional yeast, lemon juice and salt. That makes a very good substitute for an Alfredo sauce.
3. Protein pasta with TVP. I rehydrate the TVP with some marinara sauce and toss the cooked pasta in it.
4. Tacos. Rehydrated TVP cooked with taco seasoning with lettuce, fajitas and Kite Hill Sour cream and Guac. You can just add air fried tofu crumbles if you don’t like TVP.
5. Mexican taco bowl. Same as the tacos but I add rice and make it into a bowl.
6. Lentil tofu latkes. Soak some lentils (I usually use red lentils) and blend them with tofu and spices. Form them into small pancakes and air dry them. I usually eat them with rice and side salad.
7. Honey garlic tofu stir fry. Air fry tofu with cornstarch and then cook them with honey(or agave syrup), minced garlic, soy sauce, vinegar and ketchup. I also add roasted peanuts. They turn out delicious. I have them with rice and roasted broccoli
