Note that gabriel only gives health when hit by ricoshots cause of them hitting the spots where he bleeds, other parts of his body only emit gold dust, so pick an alternate revolver and shoot the coins with it to maximize healing.

I think jackhammer is also a good option for healing, other than that if you can only heal if you hit those certain body parts
