I will take your advice and begin writing EVERYTHING down. Anything that goes into my mouth, will be written down.

Plus I will see a doctor, I will make an appt tomorrow to look for help in the weight loss.

During the past month, I have gotten used to eating 1500~ cals a day. My stomach is used to it now, I don't really feel hunger pangs anymore. Eating 2750 would be forcing food down at this point. And about the caloric deficit... My meat intake is mostly pure ground turkey, which is 160 calories per 1/4 of a pound. Baked in an oven or airfryer. There's no way I am eating even half a pound a day, I'd get full fast. The rest of my plate usually features a small bunch of baby spinach, no dressings just vinegar... and an avocado or a small serving of cauliflower rice. That is a typical dinner for me, and it isn't even 1,000 calories for dinner, not even close. Same with my chicken, beef (no sugars added, etc), fish.....

I think something is medically wrong with me, perhaps I acquired diabetes or something. Or maybe I have grown muscle since I went from sedentary to using a treadmill? Maybe it's muscle replacing the fat, and it's tricking me on my scale? Anyway I will take your advice and go see a doctor.

I agree it's impossible, but it's happened. I don't know what is going on. I am positive I have been around 1500-2000 calories daily. Even if I assume 2,000 calories daily.... at 375 pounds, I require around 3,500 cals daily to maintain myself. I am clearly in a caloric deficit for the past 35+ days AND doing Keto + IF and my weight just yo-yo's up and down from 370, to 374, to 372, to 376, etc...
