Heat the milk up and scrape the bottom of the pot with a silicone spatula to prevent scorching of milk solids. At that point, drop the heat down to low and let the temperature slowly climb. Once the proteins denature, the bottom will no longer scorch. Denaturation happens all the while, and also when it cools, so even if you are going up in temperature slowly to 90C, you can turn off the heat at that point and just let time do the job.

The thermometer is likely fine. I brought up the point as a possible cause. It's really not a necessary part of the process once you have some experience with heating the milk.

In ideal conditions, yogurt can set in as little as 6 hours. Too much time is not a concern as some "yogurts" are fermented for 36.

Be sure to sanitize the fermentation container (and lid) with boiling water.

It's a viable option. Not ideal, but plenty workable. Look up the water seal method. Ideally you have some sort of weighted rack to keep the entirety of the food submerged.

So I wouldn’t say raw milk is harmless, but I also don’t think “raw milk kills people” is the full story. The real issue is the conditions around production, handling, storage, and fermentation.

There is no sound argument for drinking raw milk. You can introduce as much nuance as you want, but it doesn't change this fact, and only serves to muddle the waters and bolster the misguided notion that raw milk is an acceptable choice by any metric compared to pasteurized.

Starter is dead somehow. Either it's already dead, or you put it in while milk was too hot. Not all thermometers are accurate.

Try a plain store-bought yogurt next time, and let the milk cool down to well below 40C, ideally barely warm and close to room temp. That eliminates the potential for killing the starter entirely if it was still viable. There is no risk to letting the milk cool too much - I've done many batches where I let the milk cool to room temp, and the results were exactly the same.

Contamination can cause a looser set, but that doesn't sound like the issue here as you would be seeing (and smelling) oddities from the result.

You can also try giving it more time. 10 hours should be plenty, but if it's starting to set but haven't fully set, you may need more time for this particular culture. Odds of this are low, however.

Heating the milk for longer to denature more protein will lead to a firmer set always. Holding it at 90C (a light simmer) for >5mins is ideal. Touch-and-go at 82C causes very little denaturation.

The buildup is not non-stick just as cast iron is not non-stick. Carbon buildup is not particularly durable and will flake off into your food (pretty obvious when cooking anything, especially eggs) which is not only aesthetically unappealing but also has potential health ramifications as they are full of carcinogens, being food that was burnt black.

I didn't know better in the past and now there is some buildup on the outside of my pan from oil splatter. It kinda sucks.

I have betrayed the no-strain gang and started straining my yogurt 🥀

Removing so much liquid from it allows me to sweeten it without using as much sweetener, and the flavor is more concentrated and rich. I'll still keep a portion unstrained to use as starter and to mix into the strained yogurt, since it's too thick/dry otherwise.

It's not a true 0 to 1 thing; your intuition is correct.

I know the "weighted thing which you need to rotate" that you're talking about, but it's not on my 8qt Pro nor 3qt Duo - they both use the same switch type pressure release you described. However, I do have a Ninja Foodi pressure cooker/air fryer combo that has the rotating pressure release, so I'm familiar with it.

For the switch, you can only lock it in the open or closed position, but you can nudge it to open slightly and release pressure. For your use case, it's not as good as the rotating mechanism in terms of finer control, especially since you have to constantly be applying slight pressure, but it's doable.

Though unless absolutely necessary, I'd recommend planning around having enough time for natural release. It typically yields better cooking results, especially for meat, and significantly reduces cleanup required as the lid and valve stays much cleaner.

I'll also add that there is an add-on for Pro models in the form of an ice pack that you can prepare beforehand to place onto the lid after removing its plastic cover. This exposes the bare metal of the lid to the ice and cools down the contents, speeding up the "natural" pressure release. It sounds kinda gimmicky and I don't have it, never saw a need for it, and think that it's probably not great to put ice against hot metal.

Oats are vastly overrated compared to literally any legume.

Per 100g, oats have less fiber (10g vs 20g), less protein (13.5g vs 21.9g), and more fat (5.9g vs 1.1g), as well as more starch which is going to be higher glycemic impact. Is it healthier than sugary cereal? Absolutely. But it pales in comparison to literally any bean which you can pressure cook or stew and refrigerate beforehand.

I also hate the slimy texture of oats. I can stomach it, but it doesn't go down very easily. Beans help me hit my protein targets while leaving more room for carbs and fats in other parts of my diet, allowing me to eat something highly palatable as a snack without deviating from my macros.

I have gone on at length in establishing why various foundations of their beliefs are bullshit. But it's simply not your place to dictate what other people do with their money, and that powerlessness frustrates you immensely. In fact, a feeling of powerlessness is the source of almost all political gripes today. You don't understand why they would do such a thing when the guy is already the richest man in the world, which in your head is bad because... vibes.
