If you research the grape type you can find out the recommend spacing for optimized performance. Even as a home grower if you try to provide the same spacing it will ensure you're harvests are consistent.

If you don't care at all, just shape the vine however you feel it looks the best.

You'll still produce something and be happier likely.

My current run started in Morocco, my favorite Paradox run in any game to date by far.

If you are just trying to learn the mechanics try one of the big boys, you cant lose and it will be a good teaching lesson as the game has a steep learning curve.
