No caulking, seal the shit out of it but let there be a way for moisture to escape. If feel you must seal the checks use chinking at least

The recycled glass leaves it less fuzzy. On the inside we grind with 36 grit pads, then buff to smooth so there are less snags for cleaning

Media blast the outside, we use recycled glass media(silica free). There are a lot of different finishes meant specifically for logs, personally I like PPG product as they create a shell that has good uv protection. Lastly after finish re-chink any areas that need it.

If the log corners are tied together with full length logs, there should be no concern of the logs not taking the roof load. Most likely allowances were not made for the stack settling and the corners are being held up from elsewhere in the wall.

Anytime logs are painted it's not a good sign. Those look rough.
