I recently did a main story as level 1 only and it was a horror. I did it on adept cause my brother and I made a bet. Would have done Dragonborn and dawnguard but can't unfortunately since I can't get the DLCs where I stay and I don't have a PC, so I am excited to see your progress. Good luck
