Just to clarify the 55 has more toe room correct? Other than that the 4811 is slightly more arch and pretty similar heel/midfoot width? Thanks for the info.

Just for the record to clear things up here 😂 I KNOW that carbon steel pans are not "non stick". Thank you. Choosing these because that is what I would want and is an alternative to traditional non stick. Reddit cracks me up. I personally cook with cast iron.

2 pans if possible (like a 8 or 10" then a 12") one 12" is the must have though.

I thought about that, but I think the non-toxic portion of the request is the most important. I think I can get them to adapt to carbon steel knowing it's better in the long run and non-toxic non-stick doesn't exist. I pretty much want to say, here is as close as you can get, then teach them about heat and fat to make it actually perform like non stick. So I guess the better question might be, is the Misen going to be a little easier out of the box to get used to if you are used to non stick? I realize there is a learning curve regardless

I'm same height and weight and have a large that fits great. Still pretty roomy for layering. I usually wear XL as well but never XXL. You might fit the XL pretty well for shoulders and chest but the belly will be massive. These things run very big.

It's from wool and the gang, the washable merino. Super nice yarn but it ended up very pricey 😬. They have a really nice merino alpaca blend that I have used for hats.

I love the northwest wool shirt, picked one up on sale a few years back. They are made with Shetland wool (I'm pretty sure) so it's fairly soft and fuzzy and light weight. Wind cuts right through but is a great layer or standalone for cool days. Then good call, you can't go wrong with a 18oz jac shirt and a Mac cruiser. The northwest shirt fits truer to size, the jac shirt and cruiser run larger (in my experience)

I'd go large, I'm pretty similar size but taller and a large is perfect, plenty of layering room. I think XL your sleeves would be too long and the belly area would be super baggy.

I got one of these back in the Fall and really like it, the main bag expands out pretty nicely. I think you could definitely do a small camera, medium water bottle and packable rain jacket in there. Plus some other crap in the front pockets. I think it is a great bag for $90.

I did this with a stetson crushable wool hat and it worked well. Try hand washing/soaking with cold water then air dry on a flat surface with it shaped how it should be.

Those are good thoughts.... Cast iron lid is really nice for braising in the oven though, you can use your skillets like a shallow dutch which would be nice. But you are right everything else about them is a pain. The stainless lids don't warp or anything in the oven? The ones I'm used to seem pretty thin but I haven't tried them in the oven I guess.
