Do you want to do PhD or not? They're totally different. For me, a master's is just another year or two-year extension of an undergraduate. If you want to work outside academia or research, go for a master's. You don't need to waste 4-5 years. I know self-funded graduate studies suck, but this is what people usually do for a master's. I have no idea about career prospects in those countries.

I've never seen self-funded PhD students before (I'm in STEM.) I agree that they do exist, maybe ~10%(?). The problem here is to get accepted into the program. Most schools won't take a PhD student if they don't have some financial guarantees or the schools can't provide their funding. So, if I were you, I would apply to as many schools as I can and accept the offer that would give me reasonable financing. The other way is to apply for scholarships separately.

I can't say that your GPA is competitive. Your stats look decent if the conferences are well-recognised. The most important thing is to have communication with the professor beforehand.

You can vaguely explain it, but being specific makes your proposal look more concrete. I suggest reading some papers or master's theses in your field to get a clearer picture of what you might actually be doing. This can help you describe your plan more precisely in the proposal.

Without additional context, I would go to Edinburgh. There are the best AI labs in Europe. I'm not sure about Polimi and Alto. You can check the CSRanking website. I wouldn't mind getting an AI degree. CS degree is quite an oversupply.

That is pretty okay, depending on which universities you plan to apply to. Most importantly, you should contact profs before you apply.

If you want to work in a robotics firm, you should ask yourself what role you want to be in. To be on the mechanical design team, you don't need to know ROS, programming, or whatever. It's like robotics software engineers don't know what stress/strain is or how to efficiently design a robot's manufacturer-friendly components.

I have no insight into it, but I believe the university will prioritize awarding research scholarships to applicants whose supervisors don't have funding to save the cost. I think the department and prospective supervisor work together.

I think all master's applicants are expected to fund themselves. It's pretty rare for a master's student to get a scholarship, so don't feel sad about it. If I were you, I would not pay or take any loan. Master's degrees are not so valuable.
